Old-Fashioned Sticky Toffee Pudding 🍮

Hey there! Today, I’m excited to share my favorite recipe for artichoke pudding. It’s creamy, flavorful, and oh-so-delicious. Let’s get started!

  • 1 cup chopped pitted dates

  • 1 tsp baking soda

  • 1 cup boiling water

  • 1/4 cup unsalted butter, softened

  • 3/4 cup brown sugar

  • 2 large eggs

  • 1 1/4 cups all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 tsp vanilla extract

For the Toffee Sauce:

  • 1 cup brown sugar

  • 1/2 cup unsalted butter

  • 1/2 cup heavy cream

  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Dates:

  • Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.

  • Place chopped dates and baking soda in a bowl. Pour boiling water over them and let sit for 10 minutes. Mash slightly with a fork.

  1. Make the Cake Batter:

  • Cream together butter and brown sugar until light and fluffy.

  • Add eggs, one at a time, beating well after each addition.

  • Stir in vanilla extract.

  • In a separate bowl, whisk together flour, baking powder, and salt.

  • Gradually add the dry ingredients to the wet mixture, alternating with the date mixture.

  1. Bake:

  • Pour batter into the prepared baking dish and bake for 30–35 minutes, or until a toothpick comes out clean.

  1. Make the Toffee Sauce:

  • While the cake is baking, combine brown sugar, butter, and cream in a saucepan over medium heat.

  • Stir until the butter melts and the mixture thickens slightly (about 5 minutes). Remove from heat and stir in vanilla extract.

  1. Serve:

  • Poke small holes into the warm cake and pour half of the toffee sauce over it. Let it soak in for 10 minutes.

  • Serve warm with the remaining sauce drizzled on top and a dollop of whipped cream or vanilla ice cream.
