Almost Turkey time!

I want to share this tip.

Here is a great tip for you if you aren’t a traditional carve your turkey on Thanksgiving Day family.

A few years ago I started doing this and my family tells me it’s the juiciest, greatest tasting way to make Turkey.

I cook my turkey the day before Thanksgiving. Let it cool. Then I take all the meat off the bones and put it in a crockpot. I then cover it in chicken broth (you could use vegetable broth) and put it in the fridge overnight. On Thanksgiving I just pull it out of the fridge and put the crockpot on low and there you go.

It frees up the oven for the other side dishes you make and it saves some stress of getting that turkey done. Plus it’s delicious!!!

Yield: 4 to 6 servings

Level: Easy

Ingredients

One 10-ounce bag fresh whole cranberries (about 3 cups)

- 3/4 cup sugar

- 2 cups miniature marshmallows

- One 20-ounce can crushed pineapple, drained

- 1 cup heavy whipping cream

- 1/2 cup powdered sugar

- 1 teaspoon vanilla extract

- 1 cup pomegranate seeds

Directions

1. Pulse the cranberries in a food processor until fine and no large pieces remain. Transfer to a large mixing bowl and stir in the sugar. Cover and refrigerate for at least 2 hours or up to overnight.

2. Drain any accumulated juices from the cranberries and reserve for another use, and then stir in the marshmallows and drained pineapple and set aside.

3. Whip the heavy cream in a large mixing bowl until it begins to thicken, about 1 minute, and then beat in the powdered sugar and vanilla until soft peaks form, 3 to 5 minutes. Fold the whipped cream into the cranberry mixture, one third at a time, until fully incorporated. Transfer to an 8-by-8-inch baking dish.

4. Refrigerate or freeze for about 2 hours. Right before serving, garnish with the pomegranate seeds.

Notes

Cook's Note: Use any leftover fresh cranberry juice for other recipes, such as Cranberry Apple Roasted Turkey Breast.

My family can't get through the holiday season without enjoying multiple batches of my famous crescent rolls, now known as Mama Kelce’s Dinner Rolls. Filled with marshmallow, cinnamon, and sugar, this holiday favorite is simple to make and is actually based on the 1969 Pillsbury Bake-Off Contest winning recipe, Pillsbury's Magic Marshmallow Crescent Puffs, submitted by Edna Walker from Eden Prairie, Minnesota. There's something so special about a recipe that stands the test of time and brings joy to the table every holiday season. To celebrate more family-favorite holiday dishes and the memories that make them special, I partnered with Pillsbury to host the 52nd Pillsbury Bake-Off (https://www.pillsbury.com/bake-off-contest) this year.

TECHNIQUE TIP: Place foil or cookie sheet on rack below muffin cups to guard against spills.

Ingredients

Rolls

1/4 cup granulated sugar

2 tablespoons Pillsbury Best all-purpose flour

1 teaspoon ground cinnamon

2 (8-ounce) cans refrigerated Pillsbury Original Crescent Rolls (8 Count)

16 large marshmallows

1/4 cup butter or margarine, melted

Glaze Ingredients:

1/2 cup powdered sugar

1/2 teaspoon vanilla

2–3 teaspoons milk

1/4 cup chopped nuts

Preparation

Make the Rolls:

Preheat oven to 375°F. Spray 16 medium muffin cups with nonstick baking spray.

In a small bowl, mix the granulated sugar, flour, and cinnamon.

Separate the dough into 16 triangles. For each roll, dip 1 marshmallow into melted butter; roll in the sugar mixture. Place marshmallow on the shortest side of a triangle. Roll up, starting at shortest side and rolling to opposite point. Completely cover the marshmallow with the dough; firmly pinch edges to seal. Dip 1 end in remaining butter; place butter side down in muffin cup.

Bake for 12 to 15 minutes or until golden brown.

When done, remove from the oven and let the puffs cool in the pan for 1 minute. Remove rolls from muffin cups; place on cooling racks set over waxed paper.

Make the Glaze and Assemble:

In a small bowl, mix the powdered sugar, vanilla, and enough milk for desired drizzling consistency. Drizzle glaze over warm rolls. Sprinkle with nuts. Serve warm.
